This is seriously the most delicious penne al a vodka. It is from Nick and Toni’s Restaurant and the chef there recreated it with Ina Garten (The Barefoot Contessa.) Barefoot is my absolute favorite chef on the food network. Everything she makes is out of this world and so delicious and this penne al a vodka is no different. Roasting the tomatoes in the oven for 2 hours and then pureeing them is the reason why there is such a depth of flavor. I serve this with my “famous garlic bread” Ciabatta bread with fresh garlic, drizzle of EVOO, and garlic powder. So delish!
My Famous Balsamic Dressing
2 tablespoons of balsamic vinegar
6 tablespoons of olive oil
1 tablespoon of dijon mustard
garlic powder, crushed oregano, salt and pepper
Combine, balsmaic, dijon, garlic powder, oregano, S&P, and slowly whisk in olive oil. It should be a very thick consistency if combined properly. The dijon mustard is what makes it thick and emulsifies it. You can also use any other kind of vinegar, or just fresh lemon juice.
